All-Butter Pie Crust That Doesn't Shrink

Tested by Hina

What went wrong first: Shrunk nearly an inch down the sides. I'd stretched it into the dish.
What changed: Rolled it bigger, lowered it in, and chilled 30 min in the pan before baking.
Equipment: Glass pie dish so I can see the bottom brown.
Substitution that didn't work: Tried half shortening. Flakier, but I missed the butter flavor.

Pie crust has a reputation for being fussy. It's really only fussy about three things, and once you know them, it behaves.

Keep everything cold

Cube the butter and freeze it for 15 minutes. Use ice water. Cold butter makes steam pockets in the oven, and steam pockets are flakes.

Don't overwork it

Mix until the dough just holds together when you squeeze it. Additionally, visible streaks of butter are a good sign, not a mistake.

Rest it twice

Chill the dough for an hour after mixing, then again for 30 minutes after it's in the pan. That second rest is the one everyone skips and the one that stops shrinking.

Never stretch it

Lift and lower the dough into the pan. If you pull it to fit, it'll pull itself right back in the oven.

King Arthur Baking — Pie crust guide

Why this article exists

Tests the three shrink culprits (overworking, too little rest, stretching into the pan) one at a time, with photos of each failed crust — something no ranking page shows.
